Here are a few of our favorites:
Fruit Salsa and Cinnamon Chips.You will need:
For the Salsa:2 tablespoons granulated sugar
3 tablespoons brown sugar
3 tablespoons of jam (any flavor)
2 fuji apples, peeled,cored, and diced
1/2 – 3/4 pound fruit rainier or dark sweet cherries pitted and diced
8-12oz frozen strawberries (unsweetened) thawed and sliced (or you can use fresh strawberries)
2 kiwis, peeled and diced
For the Chips:
2 cups granulated sugar
1 tablespoon ground cinnamon
10 10-inch flour totillas
cooking spray.
To prepare the fruit salsa, combine the sugar in a l;arge bowl, then add the jam and mix. Add remaining salsa ingredients and stir to blend. Add more sugar if desired. Cover and chill for at least 15 minutes.
Preheat oven to 350 F
To prepare the chips, place sugar and cinnamon in a gallon size resealable plastic bag. Shake to mix. Coat both sides of a tortilla with cooking spray. Cut into 8 wedges. Place wedges in the bag and shake until coated. Arrange in a single layer on a baking sheet. Repeat with the remaining tortillas.
Bake for 15 minutes, turning the wedges over halfway through baking. The chips should be slightly crispy; they will crisp more as they cool. Let cool for about 15 minutes.
Serve the chips with the fruit salsa. Makes 4-6 servings.
Ham with Apple-Cranberry Salsa
you will need:
1 ham (spiral-sliced hickory-smoked is our favorite)
4 medium cooking apples
3 tablespoons lemon Juice
1/2 cup butter
1 cup walnut pieces
1 cup dried cranberries
1/2 cupe pure maple syrup
1 ham glaze mix packet
Preheat oven to 275 F
Remove all packaging materials from ham, including the clear button on the bone. Place the ham flat, face-side down, in a shallow roasting pan. Cover tightly with foil
Bake approximately 2 hours (depending on the size of your ham; follow the instructions that came with your ham), or until heated through. Do not overcook. Remove the hame from the oven and let stand, covered, for 20-30 minutes before serving.
To prepare the salsa, core and chop apples. Toss with lemon juice to keep from browning.
Melt butter in a large skillet over medium-high heat. Add walnuts and cook, stirring, until walnuts smell "toasted". Stir in apples, dried cranberries, maple syrup and ham glaze mix, stirring well to dissolve the glaze mix. Bring to a boil.
To serve, spoon salsa over hame slices. Makes 12-16 servings.
Salisbury Steaks
what you need:
1 1/2 lbs ground beef
1 medium onion finely chopped
1/3 cup fresh bread crumbs
1 egg, beaten
2 8-ounce jars beef gravy (boston market or Heinz), divided
1/4 cup finely chopped fresh parsley
Preheat oven to 350 F
In a bowl, combine beef, onions, bread crumbs, egg, 1/2 jar of gravy and all the parsley. Mix well. Form into 4-6 oval patties and place in a baking dish. Pour the remaining gravy over the meat.
cover the pan with foil and bake for 45 minutes. Remove the foil and bake for 15 minutes longer.
Makes 4-6 servings.
Half Moons II (similiar to wedding cookies)
Ingredients:
1cup butter
7 1/2 tablespoons ground walnuts
4 1/2 tablespoons white sugar
2 1/2 cups all-purpose flour
1 1/2 teaspoons vanilla extract
Directions:
Preheat oven to 325 degrees F (165 degrees C)
mix the butter with the nuts and sugar until well combined. Add the flour and the vanilla and mix.
Rolling about a tablespoon of dough in your hand. form a half moon or crescent shape.
Bake cookies on ungreased cookie sheets at 325 degrees F (165 degrees C) for 15 minutes. Immediately remove from cookie sheets and roll in white powdered sugar.
